the weeks wild veg in season,very good for you ,full of iron ,good for healthy liver and kidneys,and tastes delicious[cirsium palustre]

raw in salads ,boiled, or fried,but remove prickles first

Have you got any pictures of the thistle prepared? We've got loads of this growing on our land and just got a positive ID yesterday. I thought it might be edible but not actually sought after.

you gather the tender stalks ,peel them and use raw [gives you black teeth ]or better , boil in water with a little lemon and use as salad with fresh tomato ,lemon and olive oil dressing.

I've just tried some raw (hoping the id is correct ) and they seem to be similar to a fast grown lettuce stem that's gone to seed, sweet with a hint of bittery lettuce type taste - certainly worth a try.

Thanks for the pictures, I noticed under the prickles they were a bit furry, which I also removed as you have done.

If only I could sell them I'd make a fortune.

You'll certainly get your id when they flower - they have wonderful big droopy flowers.

I've seen them flower, there's a few buds appearing now and I wouldn't say drooping flowers more large heads made up of numerous flowers. Mine look just like images I google and certainly get to around 1.5m tall, the only difference to Bubble's photos is mine are more purple. I think they're just a fairly variable plant, some of our plants have far less purple stems than others.

I always ID them by the purple "outline" around all the leaves, but google images doesn't really show it

When you say season when does it end? I've just had some more and they were more tough than the last lot so I assume they get tougher as they grow, or is it just the poor recent weather?

I also realised they taste similar to globe artichokes, which is hardly surprising really.

Anyone else tried them, certainly worth a go IMHO?

As with all plants, when the flowering stem first rises the flesh is succulent, due to the cells having yet to fully differentiate, but as the plant concentrates on setting seed the cells have fully differentiated and become harder and tougher...
This is why cow parsley and alexander stems are only good at the preflowering stage...
